Three Kenyan products, traced by lot.
Kakamega · western Kenya
Whole cane sugar, unrefined, artisanal — origin Kakamega, Kenya. The cane juice is cooked in open pans, cooled and milled: neither refined nor bleached. Brown colour, caramel and molasses notes.
Uses — Chocolate, pastry, ice cream, coffee roasting, infused rums, fine grocery.
Murang’a / Thika · central highlands
Kenyan macadamia kernel, cracked and graded on site by licensed processors. On the volcanic highlands of central Kenya, altitude and rich soils give a dense kernel — round, creamy, barely sweet.
Uses — Chocolate, pastry, ice cream, praline, aperitif.
Coast and east of Kenya
Moringa oleifera leaf powder. Moringa likes dry heat: it thrives where few crops hold, on the coast and in the east of Kenya. Leaves dried, then milled and sieved — a deep green powder with a clean vegetal taste.
Uses — Herbalists, brands and co-packers, fine grocers, kitchens.
